Simple & Delicious Shrimp Ceviche Recipe

A zesty, no-cook seafood dish perfect for any time of year

I wanted to share one of my go-to recipes that works year-round: shrimp ceviche. This dish is light, fresh, and packed with citrusy flavor and just the right amount of heat. Whether you’re prepping for a festive gathering or just need a quick and satisfying meal, this easy ceviche hits the spot every time.


Ingredients:

  • 1 lb fresh shrimp, peeled and chopped
  • Juice of 4–6 limes (enough to fully coat the shrimp)
  • 1 small red onion, finely chopped
  • 2–3 stalks celery, finely chopped
  • 1 jalapeño, finely chopped (adjust for heat level)
  • Salt to taste
  • Optional: chopped cilantro, diced tomato, avocado, or cucumber

Instructions:

  1. Prepare the Shrimp:
    Chop the peeled shrimp into bite-sized pieces and place them in a bowl. Squeeze enough fresh lime juice over the shrimp to fully submerge them. The acidity of the lime will “cook” the shrimp—no heat required.
  2. Chop and Mix:
    Finely chop the red onion, celery, and jalapeño. Add them to the bowl with the shrimp and lime juice.
  3. Combine and Chill:
    Stir everything together thoroughly so the lime juice coats all the ingredients evenly. Let it chill in the refrigerator for at least 30 minutes (or up to 2 hours) until the shrimp turns opaque and firms up. This gives the ceviche its signature texture.
  4. Serve and Enjoy:
    Add salt to taste and serve cold with tortilla chips, tostadas, or over a bed of lettuce. Optional toppings like avocado, diced tomato, or cilantro can take it up a notch.
