Jambalaya Rice

INGREDIENTS:

  • 16 oz. smoked sausage, sliced
  • Onion, chopped
  • Green pepper, chopped
  • 3 ¾ cups rice seasoned with paprika
  • Red pepper & chili pepper to taste
  • 3 ¾ cups water
  • 2 tablespoons oil
  • Garlic, chopped
  • 4 chicken drumsticks, cooked and chopped

DIRECTIONS:

First, add 16 oz. smoked sausage to 2 tablespoons oil in medium skillet. Stir well on medium heat and add chicken to sausage. Then, add onions, green peppers and garlic. Mix well. Next, add 3 ¾ cups seasoned rice. Then add 3 ¾ cups water, mixing all ingredients well. Cook on high heat for 5 minutes, then cook on reduced medium heat for 20 minutes. Dish is ready to serve.
